Blueberry Muffins Recipe

The goodness of blueberries on muffins


Who wouldn’t love blueberries? They have a sweet flavor, succulent and great for snacks and desserts. Add to that the fact that they’re incredibly nutritious. Researchers have left no stone unturned when it comes to assessing the benefits of blueberries. From delaying signs of aging to aiding weight loss, studies indicate that these ‘little blue dynamos’ hold the key to better skin, hair, and health.

Add the goodness of blueberries on your muffin cravings. Here’s a simple and nutritious recipe:

Yield: 6 Muffins


  • Coconut Flour - 2 tablespoons
  • Almond Flour - 1/4 cup
  • Erythritol - 1/4 cup
  • Egg - 1 large
  • Ghee - 2 tablespoons
  • Almond Milk - 2 tablespoons
  • Baking Powder - 1 teaspoon
  • Blueberries - 1/3 cup


Preheat oven to 350 degrees. In a bowl, mix together coconut flour, almond flour, erythritol, egg, ghee, almond milk, baking powder. Gently fold blueberries into mixture. Divide into 6 equal portions. Use silicone molds or muffin tray. Bake at 350 for 20 mins. Serve with your farm fresh eggs!
